    Easy Cucumber Kimchi

Enjoy with a cup of luxury green tea. Kimchi is a fermented side dish traditionally made with cabbage and seasonings such as garlic, ginger, onions and chili peppers, to give it a spicy kick. However, there are hundreds of different varieties of Kimchi, which vary by season, weather conditions and region. This is an easy and light version you can make yourself. Check out our other story about What is Kimchi? This recipe is from Gwyneth Paltrow's book It's All Good. Easy Cucum

Tea Time Tales - Why the sea is salty

What better way to enjoy a cup of green tea than with a good tea time tale. Hundreds of years ago there was a king who had a very unusual stone hand mill. It looked like any other stone hand mill but it had special powers. All one had to do was say what one wanted and turn it and out would come what had been requested. If gold was requested, gold would come out. If rice was requested, rice would come out. Whatever was requested, the small hand mill would produce it. A thief m

Taste of Green Tea: Drinks, Dishes & Desserts.

Omelettes are my favorite and I can’t think of a day without eating them. They are so easy to make and can be topped with almost anything. This is my take on a healthy vegetable-filled omelette with a twist. Crack open the eggs and beat them until they form an even consistency without any air bubbles. Add all the veggies and the green tea leaves to the beaten eggs. Add salt to taste and pour the mixture into a non-stick pan. Leave it on medium heat for about 2-3 minutes and f

    Green Tea and Dark Chocolate

Tea and chocolate. The world’s most popular drink and its best loved confection. Seems an obvious combination, right? Perhaps it’s one you enjoy already. There is however an interesting and healthy alternative to the usual builder’s tea and chocolate biscuit, and that’s green tea and dark chocolate. Tea drinking, especially in Korea, often focuses on purification and cleansing, and so dark chocolate, with less sugar than the milk varieties and more antioxidants even than ‘sup

Korean Green Tea and Food Pairings

Do you typically enjoy eating cheese with a glass of wine in hand? Why not try pairing cheese with a cup of green tea instead? The pairing of green tea and cheese is a healthier alternative without the calories or alcohol content that wine has.

Much like wine, green tea contains both tannins and astringency, meaning it pairs well with many different flavours of cheese. Green tea can be used to complement, contrast or enhance the flavour of many types of cheeses. Similar gui

    Valentines, White and Black Days

Think Valentine’s Day is just a single day for men to buy their ladies flowers and chocolate? Strangely in Korea, it is tradition for women to give men chocolate on Valentine’s Day to show their love or affection. Men then have the opportunity to return the compliment a month later on March 14, which is known as White day. The tradition of the

    What is Kimchi?

As the national dish of Korea, Kimchi is so popular that the city of Seoul even has a museum dedicated to the spicy, yet tangy dish, and many Koreans say ‘kimchi’ instead of ‘cheese’ when posing for a photo!

Kimchi is a fermented side dish traditionally made with cabbage and seasonings such as garlic, ginger, onions and chili peppers, to give it a spicy kick. However, there are hundreds of different varieties of Kimchi, which vary by season, weather conditions and region. Ma
